Pomegranate, Kale & Cucumber Salad

Easy and filling!
Servings 2 People

Ingredients
  

  • 1 1/2-2 cups kale, chopped to bite size bits, stems removed
  • 1-2 TBSP olive oil
  • juice of 1 lime
  • 1 cup finely shredded cabbage
  • 1 avocado, sliced thin (Pit removed)
  • 1/2 cup pomegranate seeds
  • 1/2 a cucumber, sliced
  • Sea salt to taste

Instructions
 

  • Add your kale, olive oil and lime juice to a bowl. Wear kitchen gloves or very clean hands and massage the olive oil and lime juice into the leaves. This helps soften them so they are easier to chew.
  • Add remaining ingredients and toss well.
  • Add more lime juice if desired.
