Millet Fruit Bowl

Ingredients
  

  • 1 cup millet
  • 2 cup filtered water
  • 1/2 TBSP pure vanilla extract
  • 1 can coconut milk, chilled
  • 1/2 lb. strawberries
  • 1 large banana
  • 2 cups wild blueberries
  • 4 TBSP hemp seeds
  • sprinkle of cinnamon

Instructions
 

  • Rinse millet until water comes off clear.
  • Add millet and filtered water in a medium sized pot. Bring to a boil, cover and reduce to a simmer. Cook millet for 20 minutes.
  • Fluff mixture with a fork as you drizzle and carefully mix in the vanilla.
  • Place lid on the millet and set aside as you prepare toppings.
  • Open coconut cream can and scrape out the thickened coconut cream "fat" from the can. Place the fat in a small bowl. Use the liquid of the coconut milk later for another recipe such as a smoothie.
  • Whisk the coconut cream until smooth.
  • Cut up strawberries and slice banana.
  • Scoop out 3/4 cup portions of cooked millet into 4 serving bowls.
  • Top the millet bowls with equal portions of strawberries, sliced banana and wild blueberries.
  • Drizzle on coconut, sprinkle on 1 TBSP of hemp seeds per bowl and sprinkle with desired amount of cinnamon. And serve.

Notes

The millet to water makes about 3 cups of millet. You can also make fruit bowls and use the remaining cooked millet for other recipes. Millet is great cooked in with veggies, it can also be served with coconut oil or butter and topped with salt.
