Method
- Prepare an 8X8 glass dish by placing a thin layer of butter or coconut oil.
- In a mixing bowl add water, gelatin and vanilla. Stir well and let sit.
- Pour maple syrup into a medium sized pot and bring to a boil. Cook until maple syrup reaches 225*F.
- Carefully pour the hot maple syrup into the mixing bowl, scrape out all extra syrup from sides.
- Start mixer at low then slowly increase speed.
- Whip until soft peaks are made then pour mixture into prepared dish. Let marshmallows sit until firm.
