Prepare an 8X8 glass dish by placing a thin layer of butter or coconut oil.
In a mixing bowl add water, gelatin and vanilla. Stir well and let sit.
Pour maple syrup into a medium sized pot and bring to a boil. Cook until maple syrup reaches 225*F.
Carefully pour the hot maple syrup into the mixing bowl, scrape out all extra syrup from sides.
Start mixer at low then slowly increase speed.
Whip until soft peaks are made then pour mixture into prepared dish. Let marshmallows sit until firm.
