Sweet Cherry Pie Filling

I actually don’t usually like cherry pie. I also avoid most cherry pie anything because of the common use of red food coloring in the filling- yikes! Red food coloring is poison, it does not belong in food, ever. I loved this cherry pie filling. I wanted a thick filling that really held together well. This is a good thick gooey filling and my pie crust is from my cookbook. I love that this crust is GF and also healthy ingredients, not full of starch like many GF crusts. It also works really well to stretch like a gluten crust…. Back to the filling. We made this pie for thanksgiving and I loved it so much, I had it for breakfast the next day. Then I made 2 more pies of it and we ate those in one day! Let me know if you make it! 😀

Sweet Cherry Pie filling
Ingredients
- 6 cups organic pitted sweet dark cherries cut into fourths
- ¼-⅓ cup maple syrup
- ⅓ cup arrowroot powder
- ¼ cup lemon juice
- 1½ tsp vanilla
Instructions
- Add all ingredients to a medium sized pot.
- Bring to a simmer, stirring every 30 seconds cook for 4-5 minutes until thick.
- Pour mixture into a glass air tight container and chill for up to 4 days until ready to pour into prepared pie dish. We use this recipe for other types of berries too.
