Pomegranate, Kale Cucumber Salad

I had this for breakfast the other day, it was super quick to whip up and it was super filling! I love starting my day with salad, it’s gives me tons of energy and helps me get tons of things done. If you eat breakfast and feel like you need to go back to bed right after, it’s likely your body telling you that food is not working well for you.
I try to have some type of meal or snack ready for about two and a half hours later because that’s about when I feel hungry again.

Most of my dishes are enough to feed 2 adults and two kids because that’s what we have in our family! 🤪

I love how soft and easy to chew kale gets after you add some lime juice and olive oil, it really changes everything. Add the rest of this in and then toss it together, unless you want to lay it out all fancy at first that is.

Pomegranate, Kale & Cucumber Salad

Easy and filling!
Servings 2 People

Ingredients
  

  • 1 1/2-2 cups kale, chopped to bite size bits, stems removed
  • 1-2 TBSP olive oil
  • juice of 1 lime
  • 1 cup finely shredded cabbage
  • 1 avocado, sliced thin (Pit removed)
  • 1/2 cup pomegranate seeds
  • 1/2 a cucumber, sliced
  • Sea salt to taste

Instructions
 

  • Add your kale, olive oil and lime juice to a bowl. Wear kitchen gloves or very clean hands and massage the olive oil and lime juice into the leaves. This helps soften them so they are easier to chew.
  • Add remaining ingredients and toss well.
  • Add more lime juice if desired.
  • Send gratitude and pray for your food!
