Giant Valentine Heart Cookie

I love Valentines day! I even wrote a book about Valentines day because I love it so very much, you can buy my Valentines book here! I have never really thought of it as a romantic holiday, to me it’s just a good show love to your favorite people day. I love the color pink so combine my favorite color with, white and red, put hearts everywhere and I feel like it’s my idea of heaven. Valentines day is simply happy for me and spending Valentines day with my kids is my favorite way to spend the day of love.
My kids and I always try and make Valentines day extra special. This year we had our favorite breakfast burritos, played in the snow, ate chocolate together and watched the DVD “Heidi” (the book is much better than the movie, read the book first). I made my boys no-sugar goodie baskets, coconut oil popcorn and a valentines dinner of heart sweet potato toast, heart rice crips and this giant heart cookie!

Almond flour dough is different than traditional flour cookie dough, it does not rise much so the shape and thickness you form your dough is pretty close to what the cookie shape and look like after baking.
When edges are golden remove from the oven, allow cookie to finish baking on cookie sheet until cooled.
If desired, cut away the extra parchment paper and place on a display tray.
Frosted Giant cookie
Frost cookie with probiotic cream frosting or desired frosting.
I sliced strawberries in halves then cut a “V” shape out of the top to make heart strawberries.
Raspberries are my most favorite food of all time, they are so tasty for this heart fruit cookie.
I sliced mango into 1/4 inch thick slices, then used a mini heart cookie cutter to make mango hearts.

Giant Valentine Heart Cookie

Not only for Valentines day, this cookie heart can be made any day to give your loved ones a healthy tasty treat.
Prep Time 15 minutes
Cook Time 12 minutes

Equipment

  • food processor

Ingredients
  

  • 2 cups almond flour (I currently use the almond flour from Costco, looking for a better organic brand)
  • ¼ cup butter chilled, chopped small
  • ¼ cup real maple syrup
  • 1 tsp vanilla
  • 1/4 tsp quality salt

Instructions
 

  • In a food processor add almond flour and butter. Process until butter is well blended into flour.
  • Add remaining ingredients and process until dough forms.
  • Roll dough into a ball and place into an airtight container or bag. Chill about 12 hours or overnight.
  • Preheat oven to 350℉. Line baking sheet with parchment paper or a thin layer of butter.
  • Shape your dough into a heart about ⅓ of an inch thick. Make the edges just slightly thicker and rounded to avoid burning.
  • Bake cookie in preheated oven for 12-15 minutes, or until sides are golden.
  • Remove from oven and let cookie continue to bake on the hot cookie sheet. When cookie is cooled or mostly cooled frost it with yogurt probiotic cream frosting and add fruit.
