Carrot Salad

Carrots are a great gut health veggie and they also help balance hormones. I love all sorts of salads, but I love giving a base of something besides greens. Super simple and filled with gut healing ingredients.

Carrot Salad

Ingredients
  

  • 1-2 large Organic raw carrots shredded (skins on)
  • ½ a cucumber diced
  • ½ cup sauerkraut
  • cup diced mango
  • Juice of a fresh lemon
  • Sea salt to taste (I love Baja Gold Most)

Instructions
 

  • Layer carrots, cucumbers, sauerkraut, and mango.
  • Squeeze on fresh lemon and sprinkle with sea salt.
  • Eat for any meal or snack!
