Carrot Salad

Carrots are a great gut health veggie and they also help balance hormones. I love all sorts of salads, but I love giving a base of something besides greens. Super simple and filled with gut healing ingredients.






Carrot Salad
Ingredients
- 1-2 large Organic raw carrots shredded (skins on)
- ½ a cucumber diced
- ½ cup sauerkraut
- ⅓ cup diced mango
- Juice of a fresh lemon
- Sea salt to taste (I love Baja Gold Most)
Instructions
- Layer carrots, cucumbers, sauerkraut, and mango.
- Squeeze on fresh lemon and sprinkle with sea salt.
- Eat for any meal or snack!
