Sauerkraut
Sauerkraut is one of those foods where you can really get the good stuff, or sadly have a missed opportunity. If you are eating sauerkraut already, might as well start purchasing the brands with probiotics so you can get the extra benefits! If you are not eating sauerkraut, I suggest you start today! If you don’t like how sauerkraut tastes, that’s ok, we can take baby steps in getting you to like it! Every time I make this salad for people, they eat their sauerkraut and enjoy it.
To purchase probiotic rich sauerkraut make sure your reading labels and look for something that says it has probiotics, live active cultures or is lacto-fermented. Shelf stable sauerkraut is not going to give you the probiotics, those products have been high heat pressurized and are made to be shelf stable. BUT, there are a few sauerkraut brands that you can find in the fridge section that have ZERO probiotics and some extra preservatives added. Always read ingredient lists!
