Cilantro Anaheim Lime Dressing
I have seen multiple websites with a cilantro lime jalapeno dressing, well I wanted to mix things up and try a Anaheim in place of the jalapeno!
To this salad I added:
-fresh beets
-carrots
-cooked sprouted lentils
-cooked sprouted quinoa
-fresh cilantro leaves”
-sautéed mushrooms
All of this over a bed of spring mix. It was delightful!
Cilantro Anaheim Salad Dressing
Ingredients
- 1 small Anaheim, read notes*
- 1 bunch fresh cilantro, end of stems trimmed off
- 1 garlic clove
- 1/4 cup lime juice
- 1 TBSP honey
- 1/2 tsp ground coriander
- 1/2 tsp sea salt (or more to taste)
- 1/4 cup avocado oil
- 1/2 cup plain whole Greek yogurt
Instructions
- Remove the seeds and stem from the Anaheim and roughly chop. (Some have a bit of heat from the seeds, sometimes I save a few seeds.)
- Add pepper and remaining ingredients to a blender, blend until creamy. I use a high powered blender (Vita-Mix), This really makes an incredible texture.
- Add more salt (and honey) if desired and chill in the fridge until ready to use.
